In knitting I find that when tackling a giant project the best thing to do to not loose your mind to the k,k,k,k,k,k,k... (or in my case with the moss stitch throw blanket I'm making k,p,k,p,k... ) is to have a whole slew of little projects to break things up. So far this year I have made a black and white cotton wine bottle bag, a navy angora doubled with teal wool mug warmer, a bunch of knit roses, and what I am calling a boo-boo doggie bootie (my dog had a very badly cracked pad on her foot that got wrapped up by the vet - the bootie keeps her from messing with the bandages and has the added benefit of being ridiculously cute.)
My next endeavor is a pair of felted slippers by drops. they are super simple to do, knit on two needles with bulky yarn, and should be done in no time.
